Recipe of the Week


Welcome to Lake Gaston's Recipe of the Week!

The Lake Gaston Chamber of Commerce is in the process of publishing a grilling recipe book to go along with our annual Battle of the Barbecue event. We invite everyone to send in their favorite recipe for grilling meats, vegetables, etc., and creating side dishes to go with them. Each week will choose one recipe as our Recipe of the Week to be posted here on our website.

Grilled Salmon Packets
Serves 3-4
Ingredients
  • 1 pound of Salmon fillet with skin
  • 2 small red peppers
  • 2-3 cups of fresh sugar snap peas
  • ¼ cup of KRAFT Asian Toasted Sesame Dressing
Preparation
  • Heat Grill – medium heat
  • Cut Salmon into 4 serving size pieces
  • Place each Salmon piece on a heavy duty piece of foil sprayed with cooking spray (large enough to form a packet
  • Divide peppers and peas evenly and place on top of each piece of salmon
  • Fold foil to make packets – double fold top and ends to seal each packet
  • Grill 8-10 minutes or until salmon flakes easily with fork and vegetables are crisp/tender
  • Cut Slits in foil to release steam before opening
  • Drizzle Dressing evenly over salmon pieces
Alternative Oven Method
  • Heat oven to 350
  • Place packets in single layer on 15x10x1 inch cookie sheet
  • Back 20 minutes or until salmon flakes easily with fork
